NB in imperial measurements
12 oz self-raising flour 6oz currants
6oz butter 3oz sugar
½ teaspoon salt 1 egg
A little milk
Your mission
Mix butter and flour well together with hands or in mixer. Add sugar and currants. Beat egg and add to mixture with the salt. Add a little milk until dough is stiff and easy to roll out. Cut into small rounds with cutter until just under ½ inch thickness. Lightly grease a frying pan and heat on the hob. Cook cakes in pan until brown on underside. (this is the tricky bit). The pan should not be too hot. Turn and cook on other side until just firm. Cool on wire tray. Sprinkle with caster sugar if desired.
Bring to the allotment table on a Sunday morning.
